- 1 8-ounce package cream cheese, softened
- 32 Lotus Biscoff cookies 8.8 ounces
- 1/4 cup Biscoff cookie butter
- 10 to 12 ounces white chocolate finely chopped
- Optional Decoration:
- 2 tablespoons Biscoff cookie butter melted (for drizzling)
Line a baking sheet with parchment paper and set aside.
Place the Biscoff cookies in a food processor and pulse until they become fine crumbs.
In a microwave-safe bowl, heat 1/4 cup of cookie butter for 15-20 seconds, then stir. Add the warmed cookie butter and softened cream cheese to the food processor with the crumbs. Pulse until the mixture forms a thick dough.
Scoop out portions of the dough and roll into 1-inch balls. Place the truffle balls on the lined baking sheet. Chill in the refrigerator for at least 1 hour or in the freezer for 20 minutes.
Just before removing the truffles from the fridge, melt the white chocolate in the microwave in 30-second increments, stirring after each, until smooth. Alternatively, use a double boiler.
Using a fork, dip each chilled truffle ball into the melted white chocolate, ensuring each is fully coated. Gently shake off excess chocolate before placing the coated truffles back on the parchment-lined baking sheet.
Chill the coated truffles in the refrigerator for at least 1 hour or until the chocolate is fully set.
Optional: Warm 2 tablespoons of Biscoff cookie butter in the microwave for 15 seconds. Drizzle or pipe it over the truffles for decoration. Chill briefly to set the drizzle before serving.
Biscoff Cookies: A standard 8.8-ounce package contains 32 cookies, which is perfect for this recipe. Purchase two packages if you want extras for snacking.
