  • 1 cup pork rind crumbs
  • 1 large egg
  • 1 cup ricotta cheese
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon garlic powder optional

  • Salt to taste
  • Pepper to taste

Sauce

  • 1 cup heavy whipping cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons minced garlic
  • Salt to taste
  • Pepper to taste
  • Optional: Fresh basil for garnish

Instructions

  • Preheat the Oven: Set the oven to 400°F (200°C) and grease a 10×13-inch baking dish with melted butter.
  • Prepare the Meatballs: In a large bowl, mix the ground turkey, pork rind crumbs, egg, ricotta, Parmesan, garlic powder (if using), Italian seasoning (if using), salt, and pepper. Mix well until combined.
  • Shape and Bake: Form the mixture into evenly sized meatballs and place them in the prepared baking dish. Bake for 20 minutes, until golden brown. Set aside.
  • Make the Sauce: In a skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant. Pour in the heavy cream, season with salt and pepper, and let it simmer until thickened. Stir in the grated Parmesan cheese and basil (if using).
  • Combine: Add the baked meatballs to the skillet and gently coat them in the sauce.
  • Serve: Enjoy immediately, garnished with fresh basil if desired.
