- 8 slices of bread white or whole wheat, crusts removed
- 8 breakfast sausage links
- 4 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 tablespoon butter for cooking
- Maple syrup for serving
- Powdered sugar for garnish (optional)
Cook the Sausages: Cook breakfast sausage links according to package instructions. Set aside.
Prep the Bread: While sausages cook, remove crusts from bread slices and flatten each slice with a rolling pin.
Make Egg Mixture: In a shallow bowl, whisk together eggs, milk, vanilla, and cinnamon until well combined.
Assemble the Roll-Ups: Place a cooked sausage link at one end of a flattened bread slice. Roll up tightly and secure with a toothpick if needed. Repeat with remaining slices.
Dip and Cook: In a skillet, melt butter over medium heat. Dip each roll-up into the egg mixture, coating all sides.
Pan-Fry: Cook the roll-ups in the skillet for 3–4 minutes, turning occasionally, until golden brown on all sides. Remove toothpicks if used.
Serve: Serve warm with maple syrup and a dusting of powdered sugar, if desired.
Substitute with turkey or plant-based sausage for a lighter or vegetarian version.
Roll-ups can be assembled a day ahead and stored in the fridge. Reheat in a skillet or oven before serving.
