Ingredients

  • 3 cups chopped romaine lettuce
  • 1 ½ cups chopped cooked chicken grilled, fried, or rotisserie
  • cup Caesar dressing more if desired
  • cup freshly grated Parmesan cheese
  • ½ cup homemade croutons
  • Kosher salt and freshly ground black pepper to taste
  • 4 flour tortillas or wraps 10-inch

Instructions

Make the Salad Filling

  • In a large bowl, combine the romaine lettuce, cooked chicken, Caesar dressing, Parmesan cheese, and croutons.
  • Toss the mixture well using tongs and season with salt and pepper to taste. If desired, add more dressing to achieve your preferred level of creaminess. Set aside.

Warm the Tortillas

  • Heat a large skillet over medium heat.
  • Warm each tortilla for 15-30 seconds per side, just until pliable. Place the warmed tortillas on a plate and cover them with a kitchen towel to keep warm.
  • Alternatively, warm the tortillas in the microwave between paper towels for 15-30 seconds.

Assemble the Wraps

  • Lay each tortilla flat on a clean surface.
  • Divide the Caesar salad mixture evenly among the tortillas, placing the filling in the center.
  • Fold in opposite sides of the tortilla, then roll it up burrito-style. Secure with a toothpick if needed.

Serve

  • Serve the wraps whole or cut them in half. Enjoy immediately!

Notes

Make-Ahead Option: The wraps are best eaten the day they are made, but the ingredients (lettuce, chicken, dressing, etc.) can be prepped ahead of time and stored separately. Assemble the wraps just before serving to keep them fresh.
Variations: Swap out the chicken for grilled shrimp, turkey, or crispy tofu for a different protein option.
Tortillas: Whole wheat or spinach tortillas are great alternatives to regular flour tortillas.
