- ¼ cup ghee or butter divided
- 1 tablespoon olive oil
- 1 pound Yukon gold potatoes cut into ½-inch cubes
- 3 garlic cloves minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt plus more to taste
- ¼ teaspoon ground black pepper plus more to taste
- 1¼ pounds sirloin steak cut into ½-inch cubes
- Fresh parsley chopped (for garnish)
Heat a large cast iron skillet over medium heat. Add the olive oil and 2 tablespoons of ghee or butter to the pan.
Once the butter is melted, add the potatoes. Sprinkle the minced garlic, thyme, oregano, salt, and pepper over them.
Cook the potatoes for 2–3 minutes without stirring, then stir and continue cooking, stirring every 1–2 minutes, until they’re golden brown and fork-tender, about 8–10 minutes. Remove the potatoes from the pan and set aside.
Increase heat to medium-high and add the remaining 2 tablespoons of ghee to the skillet. Once melted, add the steak cubes. Season with a bit of salt and pepper.
Let the steak cook undisturbed for at least 2 minutes to develop a good sear. Stir and cook for an additional 1–2 minutes, or until the steak is browned and cooked to your preferred doneness.
Return the cooked potatoes to the skillet and stir to combine everything. Taste and adjust seasoning as needed.
Garnish with freshly chopped parsley and serve immediately.
You can use other small potato varieties like red or fingerling potatoes.
Cutting potatoes into small, even cubes helps them cook evenly and quickly.
Let the steak sear without stirring for the first few minutes to get a proper crust.
Serve with a side salad or roasted vegetables for a complete meal.
