- 1 pound large fresh strawberries tops cut off
- 24 Double Stuf Oreo cookies
- 4 ounces cream cheese
- 12 ounces chocolate candy melts such as Ghirardelli
- Chocolate sprinkles optional, for garnish
Slice the green caps off the strawberries in a straight line. Use a melon baller or strawberry huller to carefully hollow out the centers, creating room for the filling. Discard tops and cores. Pat strawberries dry and place on a parchment-lined baking sheet.
In a food processor, pulse the Oreo cookies into fine crumbs. Add cream cheese and blend until the mixture is smooth and holds together.
Scoop the Oreo truffle filling using a ½-tablespoon or 2-teaspoon measure. Roll into small balls and press into the hollowed strawberries, flattening the tops to sit flush with the fruit.
Melt the chocolate candy melts according to the package instructions. Dip the tops of each filled strawberry into the melted chocolate, letting any excess drip off.
Immediately sprinkle with chocolate sprinkles or crushed Oreos if desired.
Allow the chocolate to set fully at room temperature or chill briefly if needed.
Serve the same day for best flavor and texture.
